This is not a list of hotels where I have worked.It is the people I have met, the cultures I have embracedand the lessons that still inspire me every time I step into a kitchen.
Where everything began. Family. Food. Markets. Memories. The foundations of a culinary identity.

Culinary education and the first serious decision to make hospitality my profession.
A young Sicilian chef leaves home and enters the international hospitality world. The first kitchen abroad becomes the launchpad for a career that will eventually span continents.
A new country, a new culture and another important lesson: to become international, you must first learn to adapt.
The journey continues through different countries, hotels and hospitality environments. Each destination brings new techniques, new ingredients, new people and new challenges.






Leadership becomes the next stage. From Chef to Executive Chef. From managing a kitchen to developing people, concepts and entire culinary operations.

Some chapters become memories that remain for life. Among them: serving as Personal Chef to the President of the Italian Republic during the State Visit to China.



The journey eventually reaches the Indian Ocean and the Maldives. Here, decades of international experience come together.



The destination is not the end. It is simply the latest chapter. The journey continues.
